chock this up to a personal blog post...

but this one is about FOOD haha

my mom made Beef Mole for dinner

this is the first time in i dont know how many months she hasnt had SPAGHETTI MONDAY

i like spaghetti just fine, but i dig different kinds of spaghetti, you know, with tofu or chiles and tons of mushrooms and italian stewed tomatos, or the lil pasta with cheese already inside and a whole lot of grilled onions and garlic mm...but my mom makes plain spaghetti. just ground beef. just pasta. and just spaghetti sauce - og Ragu...so it gets boring.

every monday now since ive been back - i dont like spaghetti. i eat it then im like BLEH that again?!? my mom is an AMAZING cook when she tries, okay even the lame spaghetti was good at first but every monday the same thing?!?!?

ugh, i never wanna be that mom with set food things for the week - no way. i like to switch it up!

her BEEF MOLE tonight was incredible, its one of my top favs of her dishes that she's awesome at making. she said it didnt taste good - nah, she put more salt but its that balance between salt and chiloso which makes it awesome. the meat is boiled and torn into shreds, the potatos are boiled and peeled then cut into chunks. the sauce isnt like a chicken mole which has chocolate stuff in it, (ACTUALLY im not a fan of Chicken Mole, even differnt kinds, i dont dig it. and yeah i pretty much like chicken in all other situations of food.but not the mole)

my mom also makes the BEST -

CHICKEN SOUP
SALSA
CHILE - like chile salsa kind, she cooks the chile and blends it and everything
and...

POSOLE!! yes, posole - and since we've been more health conscious around the house instead of pork we've used chicken the last couple of times and its still really good! sure pork gives the meat a lil different taste, but like most mexican food it comes down to BASICS in this case the CALDO itself

actually, i think my whole family is awesome cooks -- except my dad, but we cook for him so its okay...

JULIE is amazing!! she's one of those people who is like -- lets just invent something! and she can go through the fridge and make an amazing meal out of whatever we have! theres never been anything of hers i straight out didnt like -- except for her grilled shrimp and bacon wraps, even with bacon i didnt like the shrimp (oddly enough i dig shrimp now but only in ceviche) -- she also makes the best sweets and the most amazing thing is her TAMALES! we wanted to learn to make tamales, and a few years ago she got a recipe and learned to make it-- every year when we make it (yeah its me and her, i help! heh) she always improves on the year before and we try new ones too! make chile and cheese, or sweet ones, or veggie ones.

CHRIS is amazing too! its funny, when i moved out to an apt i just didnt cook, i cooked like maybe once or twice a week but without an oven, and only two burners on the stove working and not having enough pans and pots i became annoyed with cooking -- plus id cook to much and it went wrong. but when he went to college he pretty much taught himself how to cook! and learned some stuff from friends. he makes a lil more fancy type of meals, but its always just really good.

TONY - haha so before tony couldnt really cook, i mean he could make spaghetti and that was good but not really. but then out of nowhere he busted out making turkey one day -- and i LOVE TURKEY, i love turkey more than i love chicken but turkey can come out dry, or bland -- so its tricky. but he came out with the most amazing turkey ive ever had in my life!! (i say he should cook this thanksgiving and christmas turkey, cuz my mom's wasnt so hot last time) --- but yeah, wow.. haha i even have a picture of him with his turkey!

haha and as for my dad?

well he can buy takeout. haha. but thats okay, we always make food for him. haha like he says he's the "patron".

ps. as for me, you should already know by now im an awesome cook too! ive been doing more chinese type foods, me and julie made chicken curry once and i wanna try that again but just change it up -- but i like trying new things. and yeah as far as meat goes, chicken is my favorite too cook with. i miss eating tofu and tuna -- those were my main staples of protein when i lived in my apt.
